  1. I get my kids to eat fruit by adding sliced apples to peanut butter sandwiches. Then I use a special sandwich cutter that cuts off the crust and makes cool shapes at the same time. My kids favourites are hearts and dinosaurs.

  2. It's fun sometimes to change things up by packing a healthy cereal for lunch. We pack the dry cereal (e.g. brown rice puffs) in one container, along with berries in another container, and a thermos of soy milk. At lunch the kids just need to add the milk and berries to the cereal, and they're set. It's quick, easy, and actually pretty well rounded and healthy (as long as you stay away from the "junky" cereals).

  3. Please enter my name is in the draw for the Yubo Lunch Box. My lunch/snack ideas are ...

I make home made mini muffins because my preschooler doesn't need a full sized muffin. Plus they are cute and little, which I think kids like. Also, they are easier to share if they want to.

Another thing I do is substitute yogurt for sour cream in our dip, since yogurt has more nutritional value than sour cream does.

  5. My lunch snack tip is to always mix things up do not put the same foods in all the time or they will come home uneaten. Lots of little finger foods in ziplock containers keeps them interested.

  8. This is the first year I'm going to be packing lunches for my twins. I was panicked until I sat down and made lists of items from several different categories (i.e. main dishes, fruits, vegetables, breads / grains, and treats. Now I can keep the kitchen stocked with those items and can quickly grab something from each category to include in their lunches!

The lunch idea I'm most excited about sending with my kids is a cheese fondue (in a thermos) with various veggie and bread dippables. I'm also very inspired by the bento movement and love the idea of using fruit leather to punch out letters and other shapes. I'd love to think I'll be motivated to create themed lunches (i.e. an under the sea theme with an octopus veggie dog, goldfish crackers, maybe some maki, and orange slice "boats") but I may have to work up to that!

  9. We keep it simple. Plans for the first week--turkey jerky from the farmer's market cut into small pieces, grapes, carrots, crackers and a yogurt tube. I freeze the yogurt tube to keep the lunch cool. It thaws to the right consistency by lunch time. As an adult, I like something new for lunch everyday, but my daughter prefers to have the same, predictable lunch. I think it is one thing that remains stable as she is adjusting to a new schedule.

  11. My kids really like spanikopitas. While I have to be motivated, using phyllo really isn't that hard. Just cook up some spinach and a little onions and mix with feta. Instead of melting butter I just brush a Phyllo sheet with olive oil fold in half, then cut in 2 , add the filling, brushing with oil and fold a few times to make a triangle. You can really put any filling you want in the phyllo, any veggies with cheese are a good combo. Quiche is also an easy option.
